Based on a 'butcher who cooks for you' concept, customers can hand-pick their preferred cut from the fresh display and watch as skilled chefs grill it to perfection over an open flame. Founded in January 2015 by Peter Zaidan, Macelleria takes its name from the Italian word for 'butcher shop'. His vision was to make high-quality meat accessible to the public at reasonable prices. It became an instant hit, leading to an expansion into a larger space, and now operates multiple locations across Sydney and Melbourne. Co-owner Matt Rimmer joined in 2016, contributing to the brand's growth.

Macelleria Bondi captures the casual yet vibrant energy of Bondi Beach, making it a comfortable spot for everyone from surfers to families. The open kitchen and butcher counter bring the cooking process to life, building anticipation for the meal. The restaurant has won the AGFG Readers' Choice Award and gained international recognition after being featured in the Netflix series 'Ugly Delicious'.
